Green banana flour pancakes {gluten-free}
These banana pancakes are delicious. If you are looking for some gluten-free pancakes start with green banana flour that is made from unripe bananas. I love bananas and this flour is super neat, easy to work with and I can’t wait to experiment with other recipes.

There are some health benefits with green banana flour. Here is a great article from well and good website to learn more about this flour where I was interviewed. Not only is it gluten-free but it contains resistant starch which is a fiber that is known as a prebiotic (gut food for probiotics).

You can use this flour to add it to smoothies, snack bars, or protein ball recipes, or use it as a supplement. (It is an Amazon Link).
One tablespoon contains 10 grams of carbohydrates and 40 calories.
Research suggests that heating this flour lowers the resistant starch. It appears that baking with it lowers it more. I will keep updating this post if researchers have more suggestions but for now, let’s try it with some pancakes.

The brand of green banana flour that I use is Let’s do Organic (it is an Amazon link). I will say that as with other gluten-free items when they are new in the U.S. market, it is not cheap. So the first time I did this recipe, I only used a tablespoon to check the ratios. Then, I did it again with two tablespoons and continued until I got to 1/2 cup of green banana flour. This recipe makes 6 pancakes, the perfect amount.

A basic pancake recipe with all-purpose flour is flour, sugar, baking powder, and salt. For your wet ingredients, you need eggs, milk, vanilla extract and some fat such as oil or butter.
For this green banana flour pancake recipe, it is about the same. The main difference is the ratio of flour is way less per egg and I added the greek yogurt to add a buttermilk flavor to it. They are soo tasty. Drizzle maple syrup and serve with some more bananas.

Add a banana to this recipe and you will be amazed how good it is.
Ingredients
- Dry ingredients:
- 1/2 cup green banana flour
- 1 tsp baking powder
- 2 tsp sugar
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
- Wet ingredients:
- 1 banana, mashed
- 2 eggs
- 1/4 cup milk
- 2 Tbsp greek yogurt, plain
- 1 tsp vanilla extract
- 2 Tbsp butter or oil
Instructions
- Mix all dry ingredients in a bowl.
- Mix all wet ingredients in another bowl until well mixed.
- Add dry ingredients into the wet ingredients and mix well. Let it sit for a couple of minutes. (Usually for regular pancakes you don't stir too much but in here, go mix well)
- In a skillet, heat butter or oil and spoon about 1/4 cup of the batter to make each pancake. Place the batter in a round motion to make a circle. Cook pancakes until edges are golden brown. Flip and cook on the other side.

These pancakes are delicious! However, your nutrition information shows 90 calories for 6 pancakes. Just one tablespoon of the green banana flour I am using containes 40 calories, meaning the banana flour alone packs 320 calories into this recipe. Plus the sugar, banana, egg, milk and butter/oil. If my calculations are correct that means there is approximately 822 calories in 6 pancakes. Quite a difference from what it shows on this site. I am not sending this to be rude at all. Simply to let you know you may want to recalculate. I am currently counting calories to try to lose weight and ate these thinking they were low calorie. After eating them I calculated and realized they are not.

Ok so when I created this recipe the green banana flour was pretty new for the nutrition database that I was using. I rechecked and now it is included in the database. So thank you, I added a new nutrition label with a more accurate information.
So the nutrition information label is for one pancake. This means that each pancake provides 118 calories. So yes 320 calories from the flour for the whole recipe and divide that per 6 pancakes, it comes around ~53 calories for each pancake made with green banana flour. So for 2 pancakes that is ~240 calories.
