I’m Malena a dietitian-nutritionist and certified diabetes educator. I create simple recipes that are delicious and healthy.
I have experience in teaching nutrition to Latinos from many countries and I can create all sorts of Latin recipes, and make them healthy if needed.
The secret to eating well and healthy is to prepare delicious meals. There is no need to get rid of carbs, follow a strict diet, and talk all day that you can’t eat this or that.

Let’s face it, not everyone loves salads.
I have met so many clients who will say, nope, I don’t like salads. 🤗
Here is the good news, there are so many ways to enjoy vegetables than just salads.
- Cooked vegetables are great to add in stews, soups, and as a side dish.
- Roasted vegetables have a lot of flavor with salt, pepper, and olive oil.
- Stir-fry veggies are easy to make as well as adding vegetables in omelets, frittata, and quiches.
- Fried tempura vegetables are so good to make around the summer when there are plenty of vegetables.
- Stuffed vegetables such as stuffed peppers, stuffed acorn squash, and stuffed spaghetti squash make a great combination when served with meat or vegetarian stuffing.
- How about, vegetable lasagna, mushroom ragú, eggplant parmesan?
The list goes on. Salads are my favorite but no worries if you aren’t into salads. There are so many ways to add those precious nutrients some other way.
By the way, this is watercress salad is one of my favorites!

Nutrition Tip
