Pair a salad with a great homemade salad dressing. It is easy and healthier to make your own salad dressing with a few simple ingredients. The basic ingredients that you need to have are extra virgin olive oil, an acid ingredient (balsamic, red wine or rice vinegar), sea salt, and fresh ground black pepper.

Add finely chopped onion, scallions, shallots, crushed garlic, fresh lemon juice, fresh herbs such as basil, oregano, and thyme. Mix and match with your flavors depending on your salad.
Dried herbs also work well. Whisk mustard to add more consistency to a balsamic vinaigrette.
At the end, add honey or chopped orange (or tangerine) for a little sweetness.
As a rule of thumb, the ratio I use is 1 tablespoon of vinegar to 3 or 4 tablespoons of oil, but you can use less oil. When you add the oil to the vinegar and spices, add it slowly and whisk to emulsify them.
