This vegetarian and gluten-free salad is my favorite dish to prepare for a party.

It is easy to make, beautiful and it travels well.
To prepare the salad dressing you can make it with arugula or spinach leaves. Whichever you have on hand, it is perfect each time.
Add the greens in a food processor with the mayonnaise, lemon juice, lemon zest, garlic cloves, and a pinch of salt. Process and you will end up with this vibrant green salad dressing that is savory with a slight citrus flavor.

This chickpea salad is inspired by Tabbouleh, a Middle Eastern and Mediterranean recipe where cucumbers, tomatoes, and parsley are key ingredients. For this recipe, you can add more or less of any of the ingredients.
There are several nutrients in this salad: carrots are rich in vitamin A, pomegranate seeds are rich in vitamin C, and avocados contain “good” fats such as monosaturated fats. I also really like the mint flavor but if you can’t find it in your market, go with parsley.

This green salad dressing is made of just four ingredients.
It has spinach (or arugula), Hellmann’s®/ Best Foods® Avocado Oil Mayonnaise Dressing, lemon juice, lemon zest, and garlic.
Either spinach or arugula will make this salad nutritious and savory. When ready to serve, add pomegranate seeds on top. Sweet!
Chickpea Salad with Green Salad Dressing
Chickpea salad with a green mayonnaise dressing made with Hellmann’s®/Best Foods® Avocado Oil Mayonnaise Dressing. Serve it as a side dish or appetizer, perfect for the holidays.
Ingredients
Ingredients for Green Salad Dressing:
- 1 cup baby spinach or arugula leaves
- 1/3 cup Hellmann’s®/ Best Foods® Avocado Oil Mayonnaise Dressing
- 4 tbsps lemon juice and zest (about 2 lemons)
- 1 garlic clove
- 1 tsp salt
Salad Ingredients:
- 1 can chickpeas, drained and rinsed
- 3/4 cup cucumber, chopped
- 1 cup tomatoes, chopped
- 1/2 cup carrots, chopped
- 1 cup red bell peppers, diced
- 2 green onions, chopped
- Fresh mint or parsley leaves, chopped
- 1 fresh avocado, peeled and diced
- 1 pomegranate, seeds
Instructions
- Place all dressing ingredients in a food processor or blender in the order listed and blend until smooth. Set aside.
- Combine all salad ingredients except the pomegranates in a large bowl. Add green mayonnaise dressing and combine.
- Top with pomegranate seeds. Season with salt and pepper as desired. Ready to serve.
Notes
Chickpeas can be roasted for this salad in a toaster oven or oven for 20 minutes.
