Have you heard of the dessert cocadas? It is a rich coconut dessert that is made with unrefined cane sugar (piloncillo, panela o raspadura) or raw sugar, and it can also be made with sweetened condensed milk.
The flavor of this recipe reminds me of cocada. I love coconut so much. I can eat a lot of cocadas, they are the bomb, and super sweet made with raspadura. However, since I don’t want the extra sugar, I have this recipe that I know you would like it too.
Yes, this is it! Only these four ingredients. I have also made it with fig butter that Trader Joe’s carries and it has come out delicious. In fact, give it a try with a different fig spread, try using it with orange figs.
I like to use this fig spread– this is a link to Amazon. (As an Amazon Associate I earn from qualifying purchases).
Add everything in the food processor and pulse until well combined. The mixture will be sticky and that’s fine. Wet your hands to make those pretty coconut balls and let it cool in the fridge to get them hard. Enjoy!
