This pico de gallo salsa with mango is a classic dish to serve with tortilla chips or tacos. Start with fresh, ripe mango. Ripe mangos will add the juiciness and sweet flavor to your pico de gallo. The addition of chile peppers is up to you but for this dish, give it a try with serrano which is small chile pepper that is hotter than jalapeños.The mango gives the salsa a refreshing taste and by using jalapeño serrano it will give you a perfect combination of sweet and hot. Other fruits that you can add to the pico de gallo salsa are fresh strawberries and peaches. Add other vegetables such as cucumber, cauliflower or mushrooms.

Prepare this mango salsa of pico de gallo for fish tacos. This time I didn’t have fish on hand, so we had some meat tacos with it.

Try green mangos in a salad combined with vinegar, salt, and black pepper. A green papaya salad is a popular recipe. Once the mangos are ripe, add it in a salad, or make a dip like this one. When they are too ripen, blend to make a smoothie or a dessert.
