Esta receta de España es saludable y refrescante. Fabulosa como aperitivo para una fiesta. Es mi plato favorito cuando al final del verano tengo tomates en abundancia en el huerto. Esta es la segunda receta de gazpacho en mi sitio. La primera receta que tengo es más líquida y esta es un poco más espesa. Adapta la receta de gazpacho a tu manera.

Empieza con tomates maduros. Calienta agua en una olla o una sartén. Con un cuchillo haz una “x” en la parte de abajo de tres tomate para que sea fácil de pelar la piel. Sumerge estos tomates en el agua hirviendo por un minuto. Retira del agua rápidamente y colócalos en un plato con agua fría por dos minutos.
Retira los tomates del agua fría y pela la piel cuidadosamente. Con un cuchillo pequeño retira las semillas del tomate, pica en cuadritos y trata de reservar el jugo de tomate. Coloca los tomates y su jugo en un recipiente o tazón grande donde vas a poner el gazpacho.

Pica los otros tomates frescos y retira las semillas. Corta el pepino Inglés hacia lo largo por la mitad y con una cucharadita retira las semillas del centro antes de picar en cuadritos.
Esta es la parte donde tienes que tener paciencia para picar todos los demás vegetales. Pica finamente el pimiento rojo, ajo, cebolla, jalapeño y perejil bien picadito. Coloca todos estos ingredientes en el recipiente con los tomates ya pelados y picados. Ya casi acabas.

Transfiere la mitad de esta mezcla a una licuadora y licúa hasta tener una salsa homogénea. Añade el jugo de limón, vinagre tipo Sherry y sazona con sal y pimienta al gusto. Añade agua fría para que quede ligero pero que sea un poco espeso. Transfiere esta mezcla licuada al recipiente de los vegetales picados y combina. Si está muy espesa, diluye con unos cubos de hielo. ¡Eso es todo! No te intimides por todo lo que tienes que picar. Esta receta tiene un montón de nutrientes que tu cuerpo va apreciar.
Guarda el gazpacho en la refrigeradora por una noche para que los sabores se marinen. Al servir prueba y rectifica la sazón.
Gazpacho in cups
Prepare gazpacho with simple ingredients. This is for cold gazpacho.
Ingredients
- 5-6 tomatoes, ripe
- 1 English cucumber, remove seeds and chopped
- 1 red bell pepper, seedless, finely chopped
- 1 red onion, finely chopped
- 1 jalapeño, seedless, finely chopped
- 2 garlic cloves, finely chopped
- 2 tablespoon fresh parsley, finely chopped
- 3 tablespoons sherry vinegar
- 1 lemon, juice
- 1 cup cold water
- Sea salt and black pepper, to taste
Instructions
With a small knife, make an "X" shape on the bottom of three tomatoes. Cook in boiling water for 1 minute or less to soften the skin. Remove from hot water and transfer to a bowl with cold water to stop cooking.
Peel the soft skin of these tomatoes on top of a bowl to catch what falls when you peel them. Remove the seeds (it's ok if you can't catch all the seeds) and reserve the tomato juice that falls into the bowl. Place these tomatoes and their juice in a large bowl, where you will serve the gazpacho.
Dice the remaining tomatoes and remove the seeds. Place these chopped tomatoes and the rest of the vegetables in the large bowl.
Mix and transfer some of the chopped vegetables from the bowl to a blender. Leave room to add later the water and the vinegar. If you have a hand blender it is faster and just blend some of the vegetables in the bowl but not all.
Blend for less than a minute. Add water, vinegar, lemon juice and pulse for several seconds. Try and season with salt and pepper and pulse one last time. It should be half thick not super liquid.
Add the blended vegetables to the bowl again and mix. Refrigerate for 12 hours. At least a minimum of 3 hours. Serve with more chopped vegetables or toast.
