
Zucchini is shaved thin and then dressed up with a lemon dressing and extra virgin olive oil. Add mozzarella cheese, cilantro, and shallots to this dressing and that’s it. It is a refreshing summer salad that you can prepare in no time.
First, cut the zucchini lengthwise as thin as you can get. A mandoline slicer or peeler can cut super thin slices. I even use a sharp knife. Go ahead give the zucchini a taste, they are super crunchy just like that. But let’s add some dressing to make it delicious.

If you don’t have a shallot, you can use a red onion. A shallot looks like a big garlic, and they taste like green onions but with a punch. I use shallot a lot to add in salad dressings and to cook with when sauteeing a sofrito. You could use garlic instead of a shallot if you like, but some of my people don’t like raw garlic.

Zucchini Salad with Mozzarella Cheese
No need to cook the zucchini, just marinate thin slices in a lemon dressing.
Ingredients
- 2 medium zucchini, thinly sliced
- 1 lemon juice and some zest
- 1 tbsp. olive oil, extra virgin
- 1/2 shallot, sliced
- 1/4 cup cilantro leaves, chopped
- 1/2 cup mozzarella cheese, cut or balls
Instructions
- Cut zucchini lengthwise into thin slices. Use a mandoline slicer, peeler or a sharp knife to cut it thin. Set aside.
- In a bowl, combine lemon juice, olive oil, shallot. Cut a small section of the lemon peel to get zest. Finely chop the lemon zest and add to the dressing. Whisk dressing and add cilantro, mozzarella cheese and zucchini slices.
- Let zucchini marinate for about 5 minutes and serve on top of baby lettuce.
