Tomatillo salsa is well known as salsa verde in Mexico. Combine the mild flavor of tomatillos with jalapeño or serrano, to get a spicy salsa to use for the week.

In Colorado, tomatillos grow well, and harvest is right at the end of summer. I get them from my garden.
First, clean and discard the husk of tomatillos, and place them in a pot with water.

Boil the tomatillos and jalapeños with plenty of water until bright green for about 10 minutes. Then remove from water and transfer to a blender.
Blend tomatillos and jalapeños with a garlic clove, a piece of white onion, and add salt.
Another way is to roast the tomatillos. But boiling the tomatillos is an easy way and it will still taste amazing.
I have another ingredient that I add sometimes: roasted chiles.
In the summer, roasted chiles are sold in bags. They are all roasted and cleaned, and are ready to use to make salsa. If you have access to a roasted chile, add one or two. It will be so good.

Store the tomatillo sauce in a jar with cover in the fridge. Serve with tortilla chips just like any salsa.
