This is an easy ceviche recipe made with mushrooms that would be ideal for a party. Mushroom ceviche is vegetarian and if you or your friends can’t eat fish or seafood this will be one option. Wait until you try this ceviche style recipe with fresh mushrooms. Every bite is a texture of meaty and umami flavor of the mushrooms combined with crunchy onions and tortilla chips.

Mushrooms are the one vegetable that provides vitamin D, known as the sunshine vitamin, they are low in calories and are very low in sodium. They also contain other nutritional benefits of mushrooms such as antioxidants, selenium, and ergothioneine which may help strengthen body’s immunity and protect the body’s cells.

The white button mushrooms work really well in this recipe. Rinse them well under cold water to remove the dirt. Then dry them with a paper towel. Chop mushrooms to small bite-sized and place them in a bowl.

Squeeze several limes and if you don’t have some, use lemon juice, too.
Add chopped red onion to add that pretty purple color and the ceviche flavor.
Don’t forget to add a lot of cilantro.
Season with salt.
The final touch is to add about two tablespoons of champagne vinegar. If you don’t have it, use red wine vinegar.
Serve with tortilla chips.

Mushroom Ceviche
Easy vegetarian ceviche made with mushrooms.
Ingredients
- 1 packet (16 ounces) white mushrooms, chopped (about 5 cups of chopped mushrooms)
- 1 cup of chopped tomatoes
- 1/2 red onion, chopped (about 3/4 cup)
- Juice of 3 limes
- Bunch of cilantro, chopped
- 2 tablespoons champagne vinegar or red wine vinegar
- Salt to taste
Instructions
- Rinse and clean mushrooms under cold water. Dry mushrooms gently with a paper towel. Trim the bottoms of stems.
- Combine all ingredients in a bowl and place in the refrigerator for at least 15 minutes before serving. This will help to incorporate all flavors.
- Serve with tortilla chips, toasted bread or pita chips.
- Store leftover in the fridge for up to one day.
Notes
Purchase whole white button mushrooms. The container of 16 ounces makes about 5 cups of chopped mushrooms.
